Chicken Marinade Recipe by Lorna Neadow Day: Perfect For A Summer Dinner Party

Did someone say party? Summer naturally lends itself to celebration and festivities. Successful party outcomes do exist, and to get there, I’ve provided my top three tips.

1. Set a theme, which will ultimately help you prepare the decor, menu and florals.

2. Use several food companies to help you complete your meal. An example is buying desserts from a bakery, or ordering a sushi boat from a restaurant to complement the table.

3. K.I.S.S.(keep it simple sexy!) Simple food made fabulously is always on my menus. Leave the complicated dishes to Martha Stewart.

A perfect spread is beautiful and carefree. Think grilled meats, nice cheeses, roasted veggies, bakery breads, great spreads and a few starches. Below is my chicken marinade recipe. Enjoy!

Ooo La La Chicken Marinade

1 cup mayonnaise

2 tablespoons ketchup

2 tablespoons sugar

2 teaspoons salt

1 teaspoon ground pepper

2 tablespoons chicken seasoning

1 tablespoon Italian seasoning

2 tablespoons apple cider vinegar

1 tablespoon dry chopped onion spice

1 teaspoon garlic powder

Combine ingredients in a bowl and mix well. Place raw chicken in a large bowl and add about  2 teaspoons of finished marinade to each breast used. Cover and let sit for at least 20 minutes. (Let sit overnight for best results.) Grill or sauté chicken just long enough to obtain color on each side, then move to a sheet tray and cook in a preheated 350 F oven to finish, usually about 5 to 8 minutes. Slice and serve.
