A Low-Carb Danish Recipe To Satisfy Every Sweet Tooth

I know I am a food nerd, gastronome, gourmand and a bon vivant, and I consider creating food an art. Sometimes I create for beauty and sometimes for a purpose. Take for example my Cloud 9 Danishes. They were created for a client who leans toward low-carb eating—as do many of you. Having done so myself, I know about missing sweets and breads. So, I was off to find low-carb heaven, when I created my delicious, sweet version of cloud bread.

Ingredients

Dough

4 ounces cream cheese, room temperature

4 eggs, separated

1/2 teaspoon cream of tartar

1/2 teaspoon xanthan gum

1 teaspoon kosher salt

1 cup almond flour

2/3 cup heavy cream

2 tablespoons vegetable oil

Filling

12 ounces cream cheese, room temperature

1 egg

1 to 2 tablespoons sugar or sugar substitute

1 teaspoon vanilla

1 tablespoon fresh lemon juice

Directions

Preheat oven to 375 degrees F. Prepare the filling first by adding all ingredients to a small bowl and whisking until incorporated. Set aside.

For the dough, separate the eggs, placing the whites into a mixing bowl. Whisk until frothy, then add the cream of tartar and continue to whip until firm peaks form. Remove from mixing bowl and place into a large bowl. Add the cream cheese, egg yolks, cream, xanthan gum, almond flour, oil and salt to the mixing bowl and whip until incorporated. Pour mixture into the bowl with the egg whites and gently fold.

Line a sheet tray with foil and place 1/2 cup of the mixture at a time, at least 4 inches apart, and spread out into a larger circle with a small well in the center. Once complete, add a dollop of filling in the wells created and bake for 10 to 15 minute or until golden brown.
