Russian Cremalicious Recipe Puts A Twist On The Classic Dessert
Cake, ice cream, pie… Oh my! There are so many desserts to choose from, but on Valentine’s Day you’re allowed several dips into the sweetness pool. My absolute favorite dessert happens to also be popular with the men when I cater events. So ladies, if you want to make him happy, go Russian this year!
Russian Crème is an old-fashioned treasure passed down from generations and with good reason—it is simple in preparation and delightful on the palate. It is a cross between a custard and cheesecake in flavor, but it is light, refreshing and extremely versatile.
The original version can be easily manipulated. For example, add Key lime juice and coconut to make a delicious tropical sensation.
3/4 cup heavy whipping cream
10 tablespoons sugar
1 tablespoon gelatin
1 1/2 cups sour cream
3/4 teaspoon vanilla
1 cup fruit (strawberries, blueberries, raspberries)
3 tablespoons sugar
1 tablespoon rum or any favorite liquor (Optional)
Add cream and sugar to a heavy bottomed pan over medium-high heat until sugar dissolves. Sprinkle gelatin into the mixture and stir with a whisk, making sure it also dissolves completely. Remove from heat and pour into a large bowl. Mix in the sour cream and vanilla. Use a silicone mold pan, loaf pan or individual molds coated with cooking spray, and pour in cream mixture. Add graham cracker crumbs and nuts to the bottom, or serve plain. Refrigerate until firm. Top with macerated berries.
